01 - Preheat oven to 400°F. Line a baking tray with parchment paper.
02 - In a large bowl, combine sausage meat, onion, garlic, paprika, oregano, pepper, and salt. Mix until evenly blended.
03 - Unroll the pastry sheets on a lightly floured surface. Cut each sheet in half lengthwise to create 4 long rectangles.
04 - Divide the sausage mixture into 4 equal portions. Shape each into a long log and place along one long edge of each pastry strip.
05 - Tightly roll the pastry over the filling, sealing the edge with a little water. Place seam-side down and cut each roll into 4 pieces (16 rolls total).
06 - Arrange rolls on the prepared tray. Brush tops with beaten egg (or milk for egg-free). Sprinkle with sesame seeds if desired.
07 - Bake for 22-25 minutes or until golden and cooked through. Serve warm or at room temperature.
