02 - 1 large handful fresh mint leaves (about 15–20 leaves), plus extra for garnish
03 - 1 black or green tea bag (optional, for a stronger brew)

05 - Remove the tea bag and strain out the mint leaves. Stir in honey and lemon juice until well combined.

# Expert Advice:

01 -
  • It comes together in under ten minutes but feels like something you'd be served at a proper tea house, which is basically magic
  • The combination of honey and lemon creates this perfect balance that somehow manages to be both soothing and refreshing at the same time
02 -
  • The temperature of your water matters more than you might think—boiling but not violently so is the ideal range for extracting mint flavor without destroying delicate compounds
  • Covering your tea while it steeps is absolutely essential since most of the aromatic compounds in mint are volatile and will escape into the air if you leave it uncovered
03 -
  • The best mint for tea is spearmint rather than peppermint, since it has a sweeter, more rounded flavor that doesn't overwhelm the other ingredients
  • If you grow your own mint, harvest it in the morning when the oils are most concentrated for the most flavorful tea possible
