02 - Add pitted dates, honey or maple syrup, vanilla extract, and salt to the processor. Blend continuously until the mixture comes together and holds its shape when pressed.
03 - Check the dough texture. If too crumbly to hold together, add 1-2 teaspoons of water and blend again briefly.
04 - Scoop approximately 1 tablespoon of mixture at a time. Roll between your palms to form smooth, evenly sized balls.
05 - Roll each ball in your choice of mini chocolate chips, shredded coconut, or chopped nuts, pressing gently to adhere the coating.
06 - Transfer brownie bites to the refrigerator and chill for at least 15 minutes to allow flavors to meld and texture to firm.
