01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, toss the sweet potato cubes with olive oil, cinnamon, salt, and black pepper until evenly coated. Add maple syrup and nutmeg if using.
03 - Spread the sweet potatoes in a single layer on the prepared baking sheet.
04 - Roast for 25–30 minutes, flipping halfway through, until sweet potatoes are golden-brown and tender.
05 - Serve warm, garnished with a sprinkle of extra cinnamon if desired.
