01 - Line a baking sheet with parchment paper and set aside for cooling coated marshmallows.
02 - Gently insert a wooden skewer or lollipop stick into the center of each marshmallow, pushing about halfway through.
03 - Place chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until completely melted and smooth.
04 - Hold each marshmallow by the stick and dip halfway into the melted chocolate. Lift and let excess chocolate drip off for a few seconds.
05 - Immediately press assorted sprinkles into the chocolate-coated portion while still wet, ensuring even coverage.
06 - Stand the marshmallows upright on the prepared baking sheet with sticks pointing down. Allow to set at room temperature for 15 to 20 minutes, or refrigerate for 10 minutes for faster setting.
07 - Serve immediately or store in an airtight container at room temperature for up to 2 days.
